Colombian-Style Wrapped Corn Cakes (Envueltos de Chocolo)

envueltosThese traditional corn cakes are sold on the streets of Colombia. Some people prefer to eat them alone with butter and cheese but they are also delicious as a side dish to chorizos or other fried meats. If you don’t want to use the husks for wrapping, just use aluminum foil.

In Colombia we use all of the beautiful fruits the country has to offer, like papaya, guanabana, maracuya, lulo, mango, mora and guayaba. Bistec a Caballo (Creole Steak on Horseback)

Bistec a CaballoBistec a Caballo is a traditional Colombian dish. It is basically a piece of steak with a tomato and onion sauce, topped with a fried egg. We serve it with white rice and ripe plantain on the side. As far as the interesting name, I really don’t know from where it came, but do let me know if you find out ;-)
