For those who are having trouble finding guava paste, depends locality, but it is usually in a long rectangular box, some have jelly in the middle and some dont, I would get the one without jelly for this. Might be in the ethnic foods section, but at least you have an idea of what you need to be looking for. =) I've only seen it made by Goya though, so if there are others awesome, but look out for a long rectangular box with Goya written on it, I sometimes buy the one with jelly in it, and just cut it into strips and eat it with some crackers sometimes just by itself, I LOVE the stuff!! =)

A sweet quesadilla sounds delicious! My husband brought back guava paste from Brazil and admittedly, I was a bit surprised that it was a firm, rather than jam-like texture. But as soon as I tasted my first slice, I was hooked. It's all gone now so I'll have to search for some more . . .

As a result of this blog, I discovered a Columbian restaurant in my hometown that focuses on "Columbian fast food" Not sure what that means but, I am planning to pay them a visit.

I grew up in Miami and ate countless guava pastries! Your recipe is another great variation.

Guava can be easily purchased in the ethnic section of your local grocery store and it is delicious.
