Avocado Gazpacho

Avocado gazpacho

I love traditional tomato gazpacho and I have a special love for aguacates or avocados, hence this recipe. I can just eat avocados as a snack with a sprinkle of salt on top, and I always have them in my house. I was trying to make something different with them and that is how this recipe came to mind.

This Avocado Gazpacho is a terrific appetizer for summer parties.

Hi guys,

I am back and first I would like to thank all my guest bloggers for the wonderful recipes they shared with my readers. Thank you so much Norma, Velva, Rebecca, Joan and Sook for accepting my invitation and for the fantastic posts.

Now let’s talk about this recipe, Paletas de Salpicón. Salpicón is a Colombian fruit salad made with diced fruit and watermelon juice or Colombiana (Colombian soda). In Medellin it is popular to serve it with a scoop of ice cream on top.

These fruit popsicles are a frozen variation of Salpicón and are very popular in Colombia.

Shrimp Skewers with Mango Sauce

Shrimp with Mango Sauce

During the summer I want meals to be quick and easy to prepare, but also refreshing and filling. These grilled shrimp skewers are seasoned with cumin, paprika and onion powder to give them a nice flavor. Then they’re grilled and topped with a sauce made with mango pulp, onion, hot pepper, garlic, cilantro and butter.

Shrimp and mango together are one of those perfect matches. This mango sauce is a great accompaniment to any type of seafood. It works especially well with baked salmon and grilled tilapia as well. You can prepare these shrimp skewers as part of a full meal or make them smaller and serve them as appetizers with the sauce.

Arepas de Chocolo con Quesito (Colombian Corn Cakes with Fresh Cheese)

Arepas de Chocolo are absolutely my favorite arepas. I would eat them every day if I could. These traditional and popular arepas from the Andean region of Colombia are the perfect breakfast or afternoon snack served with a hot cup of coffee or hot chocolate.

These arepas can be a little tricky to make but I have a tip that can help make the preparation relatively easy, and of course the more you make them the better you become at getting them just right. I like to start cooking them on top of the stove and finish them in the oven, this will help prevent them from breaking up. And, it is very important to use very fresh corn for this recipe.

If you decide to do the whole process on the stove top, be sure the pan it is well heated. Since the arepas are pretty delicate, you have to be careful when turning them.

Shrimp Deveiled Eggs

The first time I ate deviled eggs was about nine years ago, when I first came to the United States. I never heard of this delicious and simple appetizer while living in Colombia. For those who have never heard of Deviled Eggs, they are hard-boiled eggs, cut in half and filled with the hard-boiled egg’s yolk, mixed with different ingredients.

They are simple and easy to make and a great picnic food. There are many variations of this egg dish. I made Shrimp Deveiled Eggs and they were fantastic, I could not stop eating them.
