Hi guys,

I am back and first I would like to thank all my guest bloggers for the wonderful recipes they shared with my readers. Thank you so much Norma, Velva, Rebecca, Joan and Sook for accepting my invitation and for the fantastic posts.

Now let’s talk about this recipe, Paletas de Salpicón. Salpicón is a Colombian fruit salad made with diced fruit and watermelon juice or Colombiana (Colombian soda). In Medellin it is popular to serve it with a scoop of ice cream on top.

These fruit popsicles are a frozen variation of Salpicón and are very popular in Colombia.

This is another one of those meals that I like to cook when I crave a good home cooked meal. My mom often made this meal for my family and me and we all loved it. It was one of those dishes she made when she ran out of ideas.

She serves this dish with rice, salad and avocado on the side, which are common sides for many Colombian dishes. It is simple, but I love this Carne Guisada con Zanahoria. Just the smell reminds me of home.

Bollo de Yuca is a popular dish from the coast of Colombia. It is mashed yuca or cassava, wrapped in corn husks, and is typically served as a side dish with chorizos and butifarras. Bollo de Yuca is kind of bland by itself, but serve it with chorizo, and you’ll have the perfect couple! There is another variation of Bollo de Yuca made with anise seeds and coconut, and those are delicious all by themselves.

Arepas de Chocolo con Quesito (Colombian Corn Cakes with Fresh Cheese)

Arepas de Chocolo are absolutely my favorite arepas. I would eat them every day if I could. These traditional and popular arepas from the Andean region of Colombia are the perfect breakfast or afternoon snack served with a hot cup of coffee or hot chocolate.

These arepas can be a little tricky to make but I have a tip that can help make the preparation relatively easy, and of course the more you make them the better you become at getting them just right. I like to start cooking them on top of the stove and finish them in the oven, this will help prevent them from breaking up. And, it is very important to use very fresh corn for this recipe.

If you decide to do the whole process on the stove top, be sure the pan it is well heated. Since the arepas are pretty delicate, you have to be careful when turning them.
