Hi guys,

I am back and first I would like to thank all my guest bloggers for the wonderful recipes they shared with my readers. Thank you so much Norma, Velva, Rebecca, Joan and Sook for accepting my invitation and for the fantastic posts.

Now let’s talk about this recipe, Paletas de Salpicón. Salpicón is a Colombian fruit salad made with diced fruit and watermelon juice or Colombiana (Colombian soda). In Medellin it is popular to serve it with a scoop of ice cream on top.

These fruit popsicles are a frozen variation of Salpicón and are very popular in Colombia.

My husband has always been the one with a passion for chocolate desserts. Me? I am not a chocolate lover, I prefer fruit desserts.

For the longest time chocolate cake was never really on my list of favorites. If choosing between a banana cake and a chocolate cake, I would not hesitate for a second…I’ll take the banana. But after eating these Chocolate Molten Cakes with vanilla ice cream, I have changed my tune. This simple, rich and delicious chocolate cake has become one of my favorite desserts.

Paletas de Coco con Bocadillo (Coconut and Guava Paste Popsicles)

One of my favorites paletas or popsicles are Paletas de Coco con Bocadillo. I loved to eat them when I was growing up in Colombia. Now I love to make popsicles during the summer for my family. And to me, homemade popsicles are not only refreshing and easy to make, but they are absolutely delicious.

About 80% of my recipe development happens at night while lying in bed thinking about some of my favorite childhood foods. That is when these popsicles came to mind. Do you remember enjoying paletas or popsicles when you were a kid? I do. Enjoy!

Ingredients
(6 popsicles)

1 can (15 oz )coconut milk
1/2 cup heavy cream
1/2 cup milk
1 tablespoon cornstarch
1/2 teaspoon vanilla extract
1 (15 oz) can sweetened condensed milk
1/2 cup guava paste, diced

Paleta de Coco con bocadillo

Directions

1. Place all the ingredient in a blender, except the guava paste, and blend until well combined.

2.Place a couple of guava paste pieces into popsicle molds or paper cups. Pour the coconut mixture into the molds.

3. If using cups, you’ll need to insert wooden popsicle sticks. Freeze for about 4 hours, or until firm.

Cherry Clafoutis

Cherry Clafoutis

Clafoutis is a delicious French baked dessert that is a cross between a cake and custard, and is perfect for summer. Traditional clafoutis are made using cherries with their pits still in, which are supposed to add more flavor to the dish. In this recipe the pits are removed, making this dessert easier to eat, but you can do it either way. There are many variations of clafoutis using different fruits, depending on the recipe, and this one is my recipe for you guys.

The clafoutis is best served warm with a dusting of powdered sugar and vanilla ice cream on the side. Read more…

Paletas de Mango (Mango Popsicles)

Mango Popsicles

We were always thrilled when my mom would make us paletas on hot summer days when we were kids.

In Colombia, we make paletas or popsicles using all of the wonderful tropical fruits the country has to offer. My mom’s specialties were coconut, passion fruit, strawberry, blackberry, papaya and pineapple. All of those are fabulous, but last week, I made my favorite flavor, “Paletas de Mango”. They were so easy to make and absolutely delicious. I can’t think of a sweeter, creamier, cooler way to enjoy a hot summer day. Can you?

Banana-Pecan and Dulce de Leche Upside Down Cake

Hola everyone,

If you are searching for that one great banana cake recipe, the one that will always impress people, taste great, is easy to throw together yet so hard to mess up, then this is the cake for you.

A couple of weeks ago I was feeling guilty about the ripe bananas sitting on my counter that were about to go bad, so I made this Banana-Pecan and Dulce de Leche Upside Down Cake… and it was soooo delicious. Upside Down Cake is best served warm and even better with vanilla ice cream.

Pastel Gloria (Guava, Dulce de Leche and Cheese Pastry)

Today I would like to introduce one of my favorite traditional Colombian desserts. Which, conveniently, is also ridiculously easy to make. I have no idea how Pastel Gloria got its name, but it is a popular dessert in my country. It is essentially a puff pastry filled with dulce de leche, guava paste and cheese. What’s not to like here?
