First of all, I wanted to thank Erica for asking me to guest post on her blog. I absolutely adore her blog, recipes and love for her country! I have made so many of her recipes and they always please my entire family.
I wanted to share a Spanish recipe unique to my Spanish heritage. This has to be one of my favorite Spanish comfort foods. This is a recipe that I have grown up with and could eat every day if I had to. It’s a super easy recipe and my boys really enjoy it. This is a great and elegant appetizer that I’ve made a few months ago. I paired it with a soba noodle salad but they are also great on it’s own with a dipping sauce. I don’t consider tofu as a whole food but they have been a part of our meals in Asia and all over the world. A Sandwich or Hamburger Recipe? Neither – a Delicious Uruguayan Chivito!

What’s better than a chivito?..another chivito :D What am I talking about?
A “sandwich recipe” only found in my country, Uruguay!

What it isn’t? It isn’t a panini sandwich, or a ham sandwich, or a chicken sandwich -nor is it a gourmet hamburger!
Are you a sandwich maker? Then it’ll be very easy to make and relish!

A little of History about the Chivito
Punta del Este (the most famous vacation-spot here and it’s the Ibiza of South America!) was the cradle of its birth. In this city a lot of people, especially young people,  go to bed at sunset after dancing all night. How do they do it? Simple, they take a little nap till midnight/1 a.m. and then straight to the nightclubs!

Why is the national sandwich of Uruguay called “chivito”, which translates to “baby goat” or “little goat”, yet it’s made with beef?

As the story goes, while during a blackout one night at a restaurant, a woman customer asked if she could order goat meat, as she had recently tried this meat in another country. The restaurant owner told her that he was going to make a special dish for her with what he had on hand at that time. He was limited due to the blackout.

He prepared a toasted sandwich with butter, fillet Mignon and ham and seasoned it with other various ingredients that he had available that dark night. Although not the goat meat she had wanted, the woman was totally delighted and the “chivito” was born! Read more…

Kiev, mother of all Russian cities, is one of the most beautiful cities in Eastern Europe. Kiev has unforgettable chestnut blossoms during Spring and gorgeous colored leaves in the Fall. This wonderful specialty from the city where I was born is one of my signature dishes.

Ironically, Chicken Kiev was not actually created in Ukraine. There are various stories on the origins of the dish; one tells that it was created by a French chef and first called Chicken Supreme, then renamed Chicken Kiev when later served in Russian restaurants. The Russian food historian William Pokhlebkin claimed that Chicken Kiev was invented in the Moscow Merchants’ Club in the early 20th century and was renamed Chicken Kiev in one of the Soviet restaurants in later years. Regardless of the origin, Chicken Kiev has been a classic dish served in Russian and Ukrainian restaurants all over the world since the early 20th century. Read more…

I am thrilled and honored to do a guest post for Erica, I adore her blog and its one of the first one’s I first started to follow I always get inspiration and have developed a Love for Colombian cuisine. I was on twitter yesterday speaking to LaBellaCook and was in the mood for a fresh Shrimp and pasta recipe so she kindly sent along one!
I added spinach and peas and got some wild Key West shrimp. It is easy to make and delicious, hope you like it.

How exciting for me to be a guest on Erica’s blog while she’s away! I’ve been a big fan of hers for a while now and have enjoyed several of her recipes. I know that she gets to the point (and recipes) a lot quicker than I do…so I will try not to be as chatty as usual :)

Before I begin though….I have to apologize for the quality of the picture. You see, it was taken a while ago. Actually…probably before I started blogging. And well, I like to think that my photography skills have improved some since then. Unfortunately this is the only photo I have of this wonderful dessert.

I think I’m one of the weird ones…I’m not a huge fan of pumpkin pie (is it me or does that almost sound un-American?). But I had seen this dessert on TV one day and HAD to try it. I found it, made it…and loved it instantly. Since then it has become a favorite among family and friends….and is quickly becoming a holiday tradition. I hope you enjoy it as much as we do.
