Today’s recipe is a good summer salad: Tuna, orzo, chick peas, tomatoes, cucumber and fresh herbs with a lemon dressing. This refreshing salad just might become a summer staple at your table. It is wonderfully filling, improves as it sits, and can be easily transported for lunch at the office.

Summer has officially arrived so let’s celebrate with this wonderful Roasted Potato, Asparagus and Arugula Salad. It is super easy to make, does not require a lot of ingredients, and is delicious.

Serve this salad for a summer cookout or on a picnic with a batch of your favorite grilled meat, fish or chicken. If you’re not going to serve the salad immediately, like on a picnic, leave out the arugula until you’re ready to serve. Pasta and Chickpeas Salad

My lunches have changed since moving to the US, obviously, as I live a different life, in a different country.

Growing up my mom always made a good lunch. Everytime we came home from school, lunch was waiting for us at the table. She usually made soup, salad, fresh fruit juice and a main dish. I have to confess that I used to be a picky eater, so I was not a huge food fan, but I miss those delicious lunches that my mom used to make.
