My family loved this; I loved it for lunch the next day, too! Great warmed in the micro. You could do all sorts of… variations to this recipe and make it your own.

This looks so good Erica! I love coconut rice, and have yet to add shrimp to it (although Alejandro just told me he had crab and coconut rice when he was in Cartagena). I would probably make this with some California brown rice, and maybe garnish with ripe avocado. Thanks for the recipe.
