I made these last Saturday for my sister’s birthday (I also made Pollo Asado) and again, a keeper! The only thing I messed up with was that I used large red potatoes, don’t even know why as the recipe clearly says small red potatoes. So they were a bit hard in the middle after the water evaporated and I had to add more water and cook them longer. I had a couple of small red potatoes in the bunch and they came out perfectly.

I am so, so excited to have found this site. I grew up in Colombia and live in the US in a city where there’s no chance of finding a good Colombian restaurant. I have searched for a long time to find the right empanada recipe. And then I started looking at all of the other recipes, and wow. Yum. And, I agree that Kokoriko has the best papas saladas. Me gustan los maduros tambien. By chance do you have recipe for fried yucca? I haven’t found it yet….

One of my favorite things to eat is boiled potatoes with lots of salt, so I’m sure I would love these… they look so rustic, too.
