Pan de Queso (Colombian-Style Cheese Bread)

Pan de Queso

This is one of my favorite Colombian snacks. I’m just pleased that I no longer have to go to Colombia to eat this delicious and traditional Pan de Queso.

Have you ever tried to make a food that you loved when you were a child and had a difficult time duplicating the taste of your memory…and while using the ingredients from another country? Sometimes, even when the flavor is right, it doesn’t feel right. But hold out for those rare times that everything falls into place, like with this bread! This photograph hardly does them justice, but trust me, you are going to love this Pan de Queso.

Pandebono (Colombian Cheese bread)

Pandebono is a traditional colombian cheese bread. I have been getting a lot of e-mails asking me for this recipe, so here it is my friends. I made these delicious pandebonos last week and they came out perfectly and were delicious. For a minute, I did not miss Colombia while eating these fantastic cheese balls, accompanied by a cup of Colombian coffee of course. I ate so many of them, I could not get up from the couch for a while. Try them, you’ll thank me for it :-)

French Onion Soup

 French Onion SoupToday’s featured recipe is French Onion Soup, which is one of my favorite soups to eat when out at a restaurant. But this week, however, I decided to recreate this famous soup at home.

When it’s as cold as it has been here lately, soup is one of my favorite things to eat. Is anything better than a combination of onions, broth and toast with melted cheese in a bowl? :) . A Sandwich or Hamburger Recipe? Neither – a Delicious Uruguayan Chivito!

A “sandwich recipe” only found in my country, Uruguay!

What it isn’t? It isn’t a panini sandwich, or a ham sandwich, or a chicken sandwich -nor is it a gourmet hamburger!
Are you a sandwich maker? Then it’ll be very easy to make and relish!

A little of History about the Chivito
Punta del Este (the most famous vacation-spot here and it’s the Ibiza of South America!) was the cradle of its birth. In this city a lot of people, especially young people,  go to bed at sunset after dancing all night. How do they do it? Simple, they take a little nap till midnight/1 a.m. and then straight to the nightclubs!

Why is the national sandwich of Uruguay called “chivito”, which translates to “baby goat” or “little goat”, yet it’s made with beef?

As the story goes, while during a blackout one night at a restaurant, a woman customer asked if she could order goat meat, as she had recently tried this meat in another country. The restaurant owner told her that he was going to make a special dish for her with what he had on hand at that time. He was limited due to the blackout.

He prepared a toasted sandwich with butter, fillet Mignon and ham and seasoned it with other various ingredients that he had available that dark night. Although not the goat meat she had wanted, the woman was totally delighted and the “chivito” was born! Read more…

Apple -Chocolate Bread Pudding

Pudding de Pan y ChocolateBread pudding is one of my favorites when I want to create a dessert that is prepared as individually servings and easy to make, yet looks nice and sophisticated. I had some apples in the house and I didn’t know what to do with them and since I don’t like making pies, I created this apple-chocolate bread pudding. This dessert needs to be served warm. Colombian Yuca Bread (Pan de Yuca)

Pan de YucaPan de yuca is a traditional Colombian bread made with yuca flour and cheese. It is delicious with a cup of hot chocolate for breakfast or for an afternoon snack with a cup of tea or coffee.

I don’t understand it, but I can’t seem to follow a recipe. Can any of you fellow food bloggers relate to this? I think this is the main reason that I don’t like to bake, as baking doesn’t allow me as much flexibility with a recipe. This yuca bread recipe failed more than once because I didn’t follow my aunt’s recipe. After ruining a couple of batches, I figured that I had better follow her recipe. It’s OK to be creative with some dishes, but sometimes it’s not such a good idea. So, here is my aunt’s pan de yuca recipe ;-) Enjoy! Read more…

Colombian Cheese Bread (Almojábanas)

Almojabana007Well, to tell you the truth I am always scared of baking, but sometimes I crave my favorite Colombian “parva”, so I bake. Parva is what we call our baked goods in the region of Antioquia. Although this recipe is very easy to make, the problem I have is that in the USA, I don’t find “cuajada”, a fresh white cheese made with non-pasteurized milk, and this is the base for Colombian almojábanas. So, I have tried this recipe at least 4 times with various kinds of cheese and although the bread is not quite the same as I make in Colombia, it is pretty close and delicious! Read more…
