Pollo Asado ( Roasted Chicken)

Do you remember my Colombian-style roasted chicken legs ? If not, don’t worry, here’s the recipe. Well, here is another variation of roasted chicken that we have in Colombia and this time I used a whole chicken. The skin was crispy and flavourful. It is a beautiful roasted chicken, don’t you think? Although I am sure my vegetarian husband wouldn’t agree with me ;-)

The aromas of chicken, beer, onion and spices together were fantastic and the house smelled delicious! Remember, it is important to let the chicken marinate overnight for better flavor.

Chicken Fricase ( Fricasé de Pollo)

Fricasse is a term used to described a stew dish that is usually made with poultry and cooked in a gravy sauce, of which there are many variations. The first time I ate this chicken fricasse was at my friend’s house when we were in college and I loved it! Her mom told me how to make it, but of course, I made my own changes as I always do :-)

This dish is popular in Colombia and we eat it over white rice with salad on the side and it’s absolutely delicious. If you prefer, you can use boneless chicken breast, but I like thighs and drumsticks for flavor. Some people in Colombia omit the cream and it is really good too. Read more…

Chicken with Prunes and Bacon

Sometimes I develop a craving for a dish with a combination of sweet and savory flavors, like meat, chicken or fish with fruit sauces. This Chicken with Prune and Bacon Sauce is such a dish, and it is great for entertaining because it is a one-pot dish and very tasty.

I used drumsticks instead of breast meat for richer flavor. I served it over white plain rice and it was absolutely delicious.

Chicken Tacos (Tacos de Pollo)

Joan from Foodalogue is having a “Culinary Tour Around the World” and this time she is going “South of the Border”. The first country on the tour is Mexico and because I love their food so much, I decided to join her with these delicious Chicken Tacos with tomatillo salsa. They were easy and quick to make and full of flavor. You can make the tomatillo salsa one day before and use leftover chicken.

One of my favorite Mexican foods are tacos, so I was inspired to create these traditional Mexican Chicken Tacos with my own twist.

Fettuccine with Chicken and Asparagus

Pasta051While I was growing up, my mom used to make a delicious spaghetti with leftover shredded chicken dish. It was one of my favorite meals as a kid and this dish was inspired by her recipe.

I added some additional ingredients, such as asparagus, pine nuts and lemon juice. This fettuccine with asparagus and chicken tastes fantastic, is easy to make and is kid friendly. It is also great way to use your leftover chicken.

Roasted Chicken Legs with Lime

Pollo con Limon1I had some extra chicken legs thawed in the refrigerator that I didn’t use when I recently made my chicken soup for myself while I was sick. I still wasn’t feeling well and I needed something simple and easy to make using the ingredients that I already had at home, as I still wasn’t feeling up to going to the supermarket. So, I was thinking all night what I could make with them and the result were these chicken legs with lime.

They were delicious, packed with flavor and very easy to make and I only used a few ingredients. If you prefer, you can use chicken thighs instead. Enjoy! Read more…

Chicken Noodle Soup (Sopa de Pollo Y Pasta)

Sopa de pasta y polloI have been sick all week with a bad cold and cough. Whenever I am sick I miss my mom’s chicken soup, but since she is not here to make it for me, I had to make it for myself.
