Today I want to share with you a pasta dish that is popular in Colombia. It is very simple and quick to make and it is delicious. No, it is not an authentic Italian dish, but a Colombian version called Spaghetti con Pollo y Salsa Criolla.

There are a lot of Colombian pasta dishes that we make with our own touch and ingredients and this dish is one of them. I hope you all enjoy it!

Arroz Tapado (Rice with Chicken and Pork)

Arroz Tapado

Arroz Tapado is a classic Colombian dish from the Boyaca department of Colombia. This rice has a lot happening! It is cooked in a chicken stock with chicken pieces, pork belly, pork ribs, vegetables, milk, cheese, sautéed onions, peppers, tomatoes, garlic, cumin, achiote or color and cilantro.

Colombians love arroz or rice… we cannot live without it. Since we eat it almost every day, Colombians have countless rice based dishes in our recipe arsenals. In this dish, the chicken pieces are marinated with garlic, scallions, salt and pepper. I like to serve Arroz Tapado with avocado slices, tomato and aji or hot sauce. It can also be served with fried ripe or green plantains.

Chuzos de Pollo con Tocineta (Chicken and Bacon Skewers)

I love any type of “chuzos”, which is what we call kebabs or skewers in Colombia. It doesn’t matter if it’s beef, pork, chicken or seafood, I just love eating food grilled on a stick. Don’t you?

To make a good Colombian chuzo, you need a good marinade. I used a combination of cumin, cilantro, salt, pepper, garlic, onions, scallions and olive oil for my marinade. This marinade is great to season any type of chuzos. It is popular in Colombia to add a small arepa and a salted potato to the chuzos tip, but you can serve them with just potato if you don’t have arepa.

Colombian-Style Fried Chicken (Pollo Frito Apanado)

What’s there not to love about Pollo Frito? I know I love it! But for some reason, I have always been a little afraid to make fried chicken at home. I just didn’t think I would be able to get it just right.

This week, I was craving some fried chicken from Frisby, a fast-food franchise in Colombia that specializes in Pollo Frito (Fried Chicken). I love to go there when I am visiting Colombia and order their wonderful crispy chicken drizzled with honey. And you wouldn’t believe all of the wonderful sides that they offer… small fried arepas, rice, salted potatoes, corn on the cob, baked plantain filled with guava and cheese, fried yuca, potato salad, coleslaw and their fantastic beans. You can’t leave the place without eating their delicious esponjados!

Here is the recipe for my first ever homemade fried chicken. It was crispy on the outside and moist on the inside. Just perfect!

Pollo a la Llanera (Llanera-Style Chicken)

Pollo a la Llanera

This dish was inspired by a traditional Colombian recipe from the Llanos  zone of the country called “Conejo a la Llanera” (Llanera-Style Rabbit) . To be perfectly honest with you I don’t eat or cook rabbit. They are too cute and I happen to love the Easter bunny ;-) . So, I made this delicious Colombian dish using chicken instead, but if you like rabbit you can use the same ingredients for the sauce.

Serve it with plain white rice or your favorite vegetables on the side.

Cazuela de Pollo y Frijoles Blancos(White Bean and Chicken Casserole)

The picture may not look appetizing, but this white bean and chicken casserole was absolutely delicious. Easy and simple to make and you can use your left over chicken. It sounds perfect to me :)

This dish is very versatile, you almost can’t go wrong with any variety of ingredients. Try using pulled pork or roasted tofu in place of the chicken and red or black beans instead of white beans.

Chicken with Mushroom sauce

I love chicken and I usually prefer to cook with dark meat rather than white meat for better flavor. This chicken with mushroom sauce is a simple, comforting and delicious dish.

I think that comfort food should never be seasonal and in Colombia we cook stews, soups and other comforting dishes like this one no matter how hot it is outside. This dish can be prepared up to one day ahead.

White rice and avocado are perfect accompaniments to this dish.
