Grilled Swordfish with Avocado Salsa

Swordfish with avocado Salsa

I made this dish last week after I found myself overcome with a craving for swordfish and aguacate (avocado). The delicate fish meat was perfect with the avocado salsa, and the tiny diced jalapeño gave the it all just the right amount of heat.

This is a light and nutritious dish and excellent served either on a bed of lettuce leaves or over plain white rice. If you have leftovers just make some swordfish and avocado salsa tacos, like I did!
Swordfish Tacos

Swordfish has a firm texture that makes it ideal for cooking on the grill, but this dish is also good with grilled tuna steaks, salmon, tilapia or chicken.

Cazuela de Pescado al Coco Gratinada (Fish and Coconut Casserole al Gratin)

This fish and coconut dish is fantastic. Eating it makes me think that everything is right with the world :) Swordfish is one of my favorite fishes to use for this recipe because of its firm texture. It cooks very well in the coconut sauce, but if you prefer, you can use another white fish such as snapper, cod, sea bass or tilapia.

Serve this with nice plain white rice to soak up the delicious sauce. You will find yourself simply gobbling it up. It was completely satisfying.

Pescado Al Ajillo (Fish in Garlic Sauce)

Garlic is one of my favorite foods. If you are a garlic lover, like me, you have to try this dish.

Pescado al Ajillo is a popular dish on the Atlantic Coast of Colombia. I went to Cartagena de Indias on vacation about fifteen years ago. We visited a small family restaurant that specialized in traditional Colombian food and I ate robalo al ajillo with patacones. It was absolutely fantastic!

I made my fish with garlic sauce using swordfish, but you can use any other firm white fish fillets, such as snapper, cod, flounder, sea bass, halibut or tilapia. They will all work beautifully for this dish.

Salmon Tacos

I love all types of Mexican food, but tacos are my first choice on any Mexican menu. Tacos are so versatile you can filled them with anything, seafood, chicken, vegetables, pork, beef, beans or eggs. I am not an expert preparing the delicious food of this country, but I surely enjoy cooking it.

These salmon tacos are simple and really good! They make the perfect lunch. Serve with tomatillo sauce or red salsa.

Sudado de Pescado (Colombian-Style Fish Stew)

When I was growing up in Colombia, my mom made sudados once a week. Sudados are a popular dish in Colombia and we have many variations of this dish. For my mom, sudado is the perfect one pot, quick and simple meal. She would make a big pot so we would have left overs for the next day and served it over white rice and fried pantains with avocado on the side.

The aromas of this dish remind me of home whenever I cook it. I hope you enjoy it as much as I do. This is traditional Colombian home cooking, the style of food that my mom knows how to make very well. Some other variations of sudados are: chicken, beef, pork, meatballs and fish.

Cod Fish and Yuca Cakes

There are a lot of recipes for cod fish cakes, some better than others. I have tried a few made with potatoes that I like, but my grandmother used to make cod fish cakes with yuca, and they are definately my favorites ones. They have great texture and a wonderful taste.
