Colombian-Style Coconut Popsicles (Paletas de Coco)

In Colombia we use all of the beautiful fruits the country has to offer, like papaya, guanabana, maracuya, lulo, mango, mora and guayaba. Rice Salad (Ensalada de Arroz)

Ensalada de ArrozI love rice and I am one of those Colombians who are happy eating plain white rice with a fried egg on top and sweet plantains on the side. Maybe that doesn’t sound very appealing to most, but it doesn’t take much to make me happy, as long as I am eating Colombian style :)

This rice salad is the perfect accompaniment for grilled meats and could also be served as a vegetarian meal. Read more…

Strawberry Soup (Sopa de Fresa)

sopa-de-fresa-142One of the things I love most about spring and summer is the fresh fruits and vegetables available. Strawberries are definitely one of my favorite fruits. When I was growing up in Colombia, I loved to go out of the city with my family on weekends, stopping at fruit stands on the side of the country roads where we would find some of the most beautiful fresh fruit. The fruit stands served “fresas con cream” or strawberries with fresh heavy cream and sweetened condensed milk. They are absolutely delicious!

This strawberry soup was inspired by that fantastic and simple Colombian dessert. Enjoy! Read more…

Colombian Tree Tomato Juice (Jugo de Tomate de Arbol en Leche)

jugo-de-tomate-de-arbol-018Tomate de Arbol or tamarillo is a popular Colombian fruit. It is tangy with a little sweetness, is a great source of Vitamin A, B6 and C and also contains Vitamin E and Thiamine. In Colombia it is used in juice, desserts, and sauces. In the United States I found it frozen in the Latin aisle at the supermarket. Read more…
