I am back and first I would like to thank all my guest bloggers for the wonderful recipes they shared with my readers. Thank you so much Norma, Velva, Rebecca, Joan and Sook for accepting my invitation and for the fantastic posts.
Now let’s talk about this recipe, Paletas de Salpicón. Salpicón is a Colombian fruit salad made with diced fruit and watermelon juice or Colombiana (Colombian soda). In Medellin it is popular to serve it with a scoop of ice cream on top.
These fruit popsicles are a frozen variation of Salpicón and are very popular in Colombia.

In Colombia we use all of the beautiful fruits the country has to offer, like papaya, guanabana, maracuya, lulo, mango, mora and guayaba. I love rice and I am one of those Colombians who are happy eating plain white rice with a fried egg on top and sweet plantains on the side. Maybe that doesn’t sound very appealing to most, but it doesn’t take much to make me happy, as long as I am eating Colombian style

One of the things I love most about spring and summer is the fresh fruits and vegetables available. Strawberries are definitely one of my favorite fruits. When I was growing up in Colombia, I loved to go out of the city with my family on weekends, stopping at fruit stands on the side of the country roads where we would find some of the most beautiful fresh fruit. The fruit stands served “fresas con cream” or strawberries with fresh heavy cream and sweetened condensed milk. They are absolutely delicious!
This strawberry soup was inspired by that fantastic and simple Colombian dessert. Enjoy! Read more…
