Lentils and Pork Stew (Lentejas Estofadas con Cerdo)

I am a huge lentils and pork chops fan, so I decided to put them together in a lentil stew over white rice. It was simple to make and tasted delicious. I know, not very original, nevertheless, this is a great autumn dish .

Rice with Coconut and Lentils (Arroz con Coco y Lentejas)

This is a traditional Colombian rice recipe and if you follow this blog, you know that I use coconut milk in a lot of the traditional Colombian dishes. This delicious rice with lentils dish makes a fabulous accompaniment and could also be served as a vegetarian meal, perhaps with a green salad.

COLOMBIAN-STYLE LENTIL SOUP (SOPA DE LENTEJAS)

Sopa de Lentejas or Colombian Style Lentil Soup is a standard in a lot of Colombian kitchens, the chorizo sausage gives the soup extra flavor. This is a very substantial soup that would make a meal-in-a-bowl served with white rice.
