Mexican Burger

Mexican Burger

I know what you might be thinking,“really Erica, a burger again”? But trust me, this is good! Here is the little burger I made myself for lunch about two months ago using the delicious flavors of Mexico: a beef patty topped with tomato, guacamole, refried beans, queso fresco, and red onions.

It was absolutely fantastic and I suggest that you make this Mexican burger on Labor Day, or any day, and wash it down with a cold Margarita!

I had a craving for Mexican food the other day, which happens quite often :) I absolutely love Mexican cuisine and now my sister Catalina is living in Mexico. While talking to her last week on the phone, she told me just how wonderful true Mexican food is and of the delicious flavors. I was pretty much drooling the whole conversation.

After talking to her I decided to make one of my favorite Mexican dishes “Fajitas de Carne”, and I have to say, they were absolutely fantastic! Viva Mexico and their delicious food :)

Simple Salmon Tacos

Salmon Tacos

I love all types of Mexican food, but tacos are my first choice on any Mexican menu. Tacos are so versatile you can filled them with anything, seafood, chicken, vegetables, pork, beef, beans or eggs. I am not an expert preparing the delicious food of this country, but I surely enjoy cooking it.

These salmon tacos are simple and really good! They make the perfect lunch. Serve with tomatillo sauce or red salsa.

Chicken Tacos (Tacos de Pollo)

Joan from Foodalogue is having a “Culinary Tour Around the World” and this time she is going “South of the Border”. The first country on the tour is Mexico and because I love their food so much, I decided to join her with these delicious Chicken Tacos with tomatillo salsa. They were easy and quick to make and full of flavor. You can make the tomatillo salsa one day before and use leftover chicken.

One of my favorite Mexican foods are tacos, so I was inspired to create these traditional Mexican Chicken Tacos with my own twist.

Tomatillo Salsa or Salsa Verde

I have a special love for authentic Mexican food, which differs from much of what we are served at typical American style Mexican restaurants. I am not an expert at cooking Mexican cuisine but I do love to play in my kitchen with the amazing flavors they use. There is nothing better than homemade salsa and I made my first tomatillo salsa last week and it came out fantastic. You can use it as a dip with tortilla chips or add it to your favorite Mexican dishes.
