Fish in mushroom sauce is a dish that I usually get in restaurants in Colombia. Some fish commonly used in this recipe are catfish and trout, and it is usually served with patacón and salad. I love tilapia and I had it in my refrigerator, so used it instead and it turned out very well!

I love to make quesadillas, mainly because they are versatile. You can play with so many of your favorite ingredients and create an absolutely delicious quesadilla. I made this mushroom quesadillas tonight for dinner and my husband loved them. It is a great vegetarian dish. Enjoy!

This is a fantastic brunch recipe as it is easy to make and delicious. You can even play with the dish and add your favorite vegetables. I happen to love mushrooms and asparagus and used Portobello’s but you can use any kind of mushrooms that you like. Enjoy!
