Lentils and Beef Stew ( Estofado de Lentejas con carne)

This time of year there is nothing better than cooking in your crock pot. One single pot, slow cooking and great smells. Now that’s comforting and that’s what I love to cook during the winter. Chicken Fricase ( Fricasé de Pollo)

Fricasse is a term used to described a stew dish that is usually made with poultry and cooked in a gravy sauce, of which there are many variations. The first time I ate this chicken fricasse was at my friend’s house when we were in college and I loved it! Her mom told me how to make it, but of course, I made my own changes as I always do :-)

This dish is popular in Colombia and we eat it over white rice with salad on the side and it’s absolutely delicious. If you prefer, you can use boneless chicken breast, but I like thighs and drumsticks for flavor. Some people in Colombia omit the cream and it is really good too. Read more…

Ensalada Rusa (Russian Salad)

Ensalada Rusa or Russian Salad is a popular dish in Colombia and other Latin American countries. I remember eating this delicious potato salad as a side dish to Pernil de Cerdo (Roasted Pork Leg or Ham), at almost every party my family ever had in Colombia.

My husband hates potato salad, so I never made this one for him before. I made it recently for this site and he loved it so much that he asked me to make it again a week later for a family party. To my surprise everyone at the party asked for the recipe as they loved it too. They all said that it was much different from the potato salads that they are used to eating here in the United States. There are a lot of variations of this salad, but I make the one my aunt makes in Colombia and it is delicious. Try it, I would love to know what you think of my Russian Salad. Read more…

Quick Pinto Bean Soup with Chorizo

Quick Bean Soup
I love cooking comforting food this time of the year. I know everyone has a different opinion of what comfort food is, but for me it is a large pot of soup with Colombian flavors simmering on the stove . I usually make my bean soup with dried beans, but this week I was craving this pinto bean soup that my grandmother used to make. However, I forgot to soak the beans overnight, so I decided to make a quick soup with canned beans instead and I must say, this a great alternative when you don’t have time to simmer dried beans for 3 hours.

I know my mom wouldn’t be proud of me right now because in my house, we always cooked beans from scratch and she usually makes them in the pressure cooker so they cook pretty fast as well. Sorry mom ;-)

Saffron and Garlic Mashed Potatoes

Mashed PotatoesWe don’t celebrate Thanksgiving in Colombia, as it is an American holiday, but since meeting my American husband, I celebrate this American tradition with his family. I am sure most Colombians would love to have another day to celebrate and an excuse to have a party :) .

Guineo Soup (Sopa de Guineo)

Sopa de GuineoThis guineo soup is one of my mom’s favorites. Since I’ve lived in the United States, I have yet to see guineos, until this past week that is. I went to the local supermarket a few days ago and as always, I went to the international vegetable and fruit aisle to look for new stuff. Anyway, you could imagine how I felt when I saw guineos with a little sticker on them that said “from Colombia”. I experienced pure joy and I wanted to by a case, just in case I couldn’t find them again for another nine years.

You may be asking yourself, what are guineos? Well, they look like small green plantains, yet they are less starchy. They are also known as unripe bananas, and to me, they are a mix between green bananas and green plantains. This vegetable is used in Latin American cuisine in many different ways. This recipe is just one example.
