Catfish and Potato Pie (Pastel de Bagre y Papa)

Catfish PieThis catfish and potato pie is a traditional Colombian dish. Catfish or bagre is a popular fish in Colombia and we cook it in many different ways, this cake being one of them. I prepared it in individual servings this time for a little change as it in normally served in one larger baking dish. Salmon with Chimichurri Sauce

Salmon con ChimichurriThe idea of making salmon with chimichurri came to me a few days ago out of the blue and I thought it could be delicious. I remembered that when I lived in Colombia I had store bought chimichurri in the fridge most of the time. I would put it on all of my meats and even over white rice, but since I came to the United States I haven’t used it much, so guess what? Starting today, I will have homemade chimichurri in my fridge.

As I’ve mentioned in other posts, chimichurri is a traditional Argentinean herb sauce but there are other South American variations as well. For example, in Colombia, we add cilantro to the chimichurri. I hope you enjoy this salmon with Colombian chimichurri sauce! Read more…

Arepas with Salmon and Shrimp (Arepas con Salmon y Camarones)

Arepa con SalmonThis is the arepa I made myself for lunch yesterday. Arepas are an essential part of Colombian cuisine, which you may have already figured out if you’re a regular reader of this blog :) . My mom actually believes that I could not live without arepas and if I really think about it…she’s probably right. Arepas are popular in Venezuela as well.

In Venezuela, they make arepas thicker and fill them with different ingredients than used in Colombia. In Colombia, we make the arepas thinner and top them with our favorite ingredients. Nowadays, you can buy arepas in packages at the grocery store, just like you’ll find Mexican tortillas. This arepa with salmon and shrimp was just wonderful. Enjoy it! Read more…

Colombian-Style Fish Balls (Albóndigas de Pescado)

Fish BallsI went to the supermarket this week and must admit that it is one of my favorite places in the world. I just love any place where good food is displayed in such abundance. I saw these beautiful cod fish fillets and couldn’t resist, so I bought one pound of them. I came home and realized that I had no idea what to do with this fish. Salmon with Shrimp Sauce (Salmon con Salsa de Camarones)

Salmon con CamaroneThis week, for lunch, I made this salmon with shrimp sauce for my sister and she just loved it! As I’ve mentioned, my sister is visiting from Colombia and one of the things I love about having her here is that we share the same enthusiasm about food. We are having a great time together and a lot of my childhood memories are coming back including many of our favorite dishes that we shared growing up together.
