Tuna, Chickpeas and Orzo Salad

Today’s recipe is a good summer salad: Tuna, orzo, chick peas, tomatoes, cucumber and fresh herbs with a lemon dressing. This refreshing salad just might become a summer staple at your table. It is wonderfully filling, improves as it sits, and can be easily transported for lunch at the office.

The tuna makes this a meal-in-a-bowl type of salad, and if you want a vegetarian option, just omit the tuna.

It may have become apparent by now just how much I love arepas. I could eat them at every meal. This lunch was so good… a crispy arepa with simple and beautiful toppings… creamy tuna and shrimp.

Arepas have been a fairly trendy lunch fare in Colombian restaurants for a while. Originally, “arepas” were usually eaten for breakfast with butter and topped with eggs or cheese. But the uses of arepas have changed and they are now used for simple, easy and delicious lunch and dinner main dishes as well.

A corn cake, on which ingredients are laid, creating a sort of open-faced sandwich. This simple idea can lead to an infinite number of variations. Like this Arepa with Atún y Camarones that I made for my sister and I for lunch about 3 weeks ago. Enjoy! Read more…

Tuna Dip (Dip de Atún)

Tuna Dip 001I always have tuna cans in my pantry because tuna is one of my favorite foods to use for a quick and simple lunch. Sometimes I even just place the tuna on a plate, add chopped tomato, salt, pepper and squeezed lime juice, and that is my lunch!

This tuna dip is an easy and simple appetizer and was popular at my family parties in Colombia. We would serve it with an assortment of raw vegetables or spread it on delicious crostini.

Pasta and Tuna Salad (Ensalada de Pasta y Atún)

Pasta con atunI love tuna and sometimes when I don’t feel like cooking I just open a can of tuna, ad some fresh squeezed lime juice and chopped tomatoes and that is my lunch. The other day, however, I got I little fancy and added more ingredients to my tuna salad :)

This is a simple and delicious pasta and tuna salad. You can use frozen peas and carrots if you don’t have fresh at home. Read more…
