Black Bean Patties
I love all sorts of bean dishes. They are my favorite food on earth and as a result, I have countless bean recipes. I’ve never eaten bean patties before though, so a couple of weeks ago I made Black Bean patties for dinner and they were delicious, nutritious and versatile!
We all loved these patties. Make these for your vegetarian friends or family members, they are going to love them. I served them with rice and vegetables on the side, but if you prefer, you can make some vegetarian burgers with them.

Arroz Tapado (Rice with Chicken and Pork)
Arroz Tapado is a classic Colombian dish from the Boyaca department of Colombia. This rice has a lot happening! It is cooked in a chicken stock with chicken pieces, pork belly, pork ribs, vegetables, milk, cheese, sautéed onions, peppers, tomatoes, garlic, cumin, achiote or color and cilantro.
Colombians love arroz or rice… we cannot live without it. Since we eat it almost every day, Colombians have countless rice based dishes in our recipe arsenals. In this dish, the chicken pieces are marinated with garlic, scallions, salt and pepper. I like to serve Arroz Tapado with avocado slices, tomato and aji or hot sauce. It can also be served with fried ripe or green plantains.

Roasted Vegetables, Asparagus and Queso Fresco Tart
It is tough to think of a better lunch on a spring day than a beautiful crispy, golden puff pastry filled with roasted vegetables, asparagus and creamy queso fresco. This tart was absolutely delicious, we all loved it! It would be great for brunch too.
