Ensalada Rusa (Russian Salad)

Ensalada Rusa or Russian Salad is a popular dish in Colombia and other Latin American countries. I remember eating this delicious potato salad as a side dish to Pernil de Cerdo (Roasted Pork Leg or Ham), at almost every party my family ever had in Colombia.

My husband hates potato salad, so I never made this one for him before. I made it recently for this site and he loved it so much that he asked me to make it again a week later for a family party. To my surprise everyone at the party asked for the recipe as they loved it too. They all said that it was much different from the potato salads that they are used to eating here in the United States. There are a lot of variations of this salad, but I make the one my aunt makes in Colombia and it is delicious. Try it, I would love to know what you think of my Russian Salad. Read more…

I am thrilled and honored to do a guest post for Erica, I adore her blog and its one of the first one’s I first started to follow I always get inspiration and have developed a Love for Colombian cuisine. I was on twitter yesterday speaking to LaBellaCook and was in the mood for a fresh Shrimp and pasta recipe so she kindly sent along one!
I added spinach and peas and got some wild Key West shrimp. It is easy to make and delicious, hope you like it.

Creamy Vegetable Soup (Crema de Verduras)

Creamy vegetable soupThis soup was inspired by mom’s sopa de verduras. As a little girl, I was a very finicky eater and that was at a time when grandmothers thought that if you weren’t a little fat, you weren’t healthy :) . So, my mom and grandmother did everything they could to get me to eat. My mom discovered that if she made me soup and put it in a blender, that I would eat it! Well, this vegetable creamy soup was my favorite.

Autumn is a beautiful season, but it has been very cold here in the Northeast part of the country lately. It even snowed yesterday, which was a big surprise. Although it’s only the middle of October, it seems as though winter has made an early appearance. I’m not a big fan of winter and every time I see the snow I think about soup. After all, what’s better than a bowl of soup on a cold winter day?

Creamy Asparagus Orzo

asparagus orzoI love risotto but sometimes I don’t have the patience to stand in front of the stove stirring for such a long time, as is required, which is why I created this recipe. This week I was craving asparagus risotto, but I was too hungry to wait for a risotto to be cooked, so I used orzo pasta instead. It was easy and absolutely delicious.
