Sudado de Pescado (Colombian-Style Fish Stew)

When I was growing up in Colombia, my mom made sudados once a week. Sudados are a popular dish in Colombia and we have many variations of this dish. For my mom, sudado is the perfect one pot, quick and simple meal. She would make a big pot so we would have left overs for the next day and served it over white rice and fried pantains with avocado on the side.

The aromas of this dish remind me of home whenever I cook it. I hope you enjoy it as much as I do. This is traditional Colombian home cooking, the style of food that my mom knows how to make very well. Some other variations of sudados are: chicken, beef, pork, meatballs and fish.

Cod Fish and Yuca Cakes

There are a lot of recipes for cod fish cakes, some better than others. I have tried a few made with potatoes that I like, but my grandmother used to make cod fish cakes with yuca, and they are definately my favorites ones. They have great texture and a wonderful taste.

Enyucado (Colombian Style Cassava Cake)

Enyucado is a traditional recipe from The Atlantic coast of Colombia. It is a cake made with shredded yuca, cheese, coconut and star anis seeds and is sweet with a wonderful texture.

Quick Pinto Bean Soup with Chorizo

Quick Bean Soup
I love cooking comforting food this time of the year. I know everyone has a different opinion of what comfort food is, but for me it is a large pot of soup with Colombian flavors simmering on the stove . I usually make my bean soup with dried beans, but this week I was craving this pinto bean soup that my grandmother used to make. However, I forgot to soak the beans overnight, so I decided to make a quick soup with canned beans instead and I must say, this a great alternative when you don’t have time to simmer dried beans for 3 hours.

I know my mom wouldn’t be proud of me right now because in my house, we always cooked beans from scratch and she usually makes them in the pressure cooker so they cook pretty fast as well. Sorry mom ;-)

Croquetas de Yuca (Cassava Croquettes)

CroquetaThese delicious Croquetas de Yuca will work as an appetizer, snack or as part of a main course. I have a weakness for anything involving yuca or cassava. My mom always included yuca in her dishes and I loved it. I actually prefer yuca over potatoes however my sister, Catalina, hates yuca, so as usual, my poor mother had to contend with the different likes and dislikes of her three children at meal time.

These croquetas are a fantastic finger food and for Colombians, this is a great kind of appetizer as it enables us to dance and eat at the same time :) . I don’t know if I’ve ever mentioned this before, but for Colombians, a party is not a party if we’re not dancing. Whether it’s morning, afternoon or night, if there is a party, we dance!

Cassava Balls with Melado (Bolitas de Yuca con Melado)

Yesterday I posted a recipe for Melado, so today I want to share with you a delicious recipe that uses this syrup. Yuca or cassava balls are a traditional Colombian recipe that you can eat as a side dish or appetizer with your favorite sauce, including Melado, as in this recipe. They are sweet and absolutely fantastic and your kids will love them too!
