Sudado de Tres Carnes (Colombian Three Meats Stew)

Ingredients
 

  • 4 cups water, or more if necessary
  • 1 cup aliños sauce
  • 8 pieces of chicken
  • 1 pound pork meat or pork ribs
  • 1 pound beef for stew cut into pieces
  • 1 cup diced tomato
  • 4 medium white potatoes, peeled and cut in half
  • 1 pound frozen or fresh yuca cut into big pieces
  • 2 large carrots, sliced
  • ¼ cup chopped fresh cilantro
  • Salt and pepper to your taste

Instructions
 

  • In a large pot, place the water, chicken, pork and beef, aliños, tomatoes, salt and pepper. Simmer over low heat, covered for about 35 minutes.
  • Add the potatoes, carrots and yuca. Then cover and cook for an additional 30 minutes or until the vegetables are soft. Check frequently and add additional water as necessary. Season with salt and pepper, add chopped fresh cilantro and serve over white rice.
