Ingredients
 

  • 2 pounds VERY fresh sea bass halibut or other white fish cut into bite size cubes
  • Salt to your taste
  • Fresh lime Juice from 20 limes
  • 1 tablespoons of chopped hot red pepper
  • ½ cup red bell pepper chopped
  • 1 small red onion thinly sliced
  • ½ cup of fresh cilantro finely chopped
  • Salt to taste

Instructions
 

  • Wash the fish well and place in a glass bowl. Season with salt and add the juice of 10 limes. Cover and let rest in the fridge for about 3 hours.
  • Rinse the fish and discard the lime juice. Add the peppers and onions. Cover and refrigerate for 2 hours more.
  • Add the chopped cilantro, salt and lime mixture to the fish and serve with saltine crackers on the side.

Notes

You can use halibut, sea bass, cod to make this fish ceviche, but be sure the fish is very fresh. Make the ceviche the same day you buy your fish to be safe.
I prefer to eat this ceviche de pescado the same day.
