In a small bowl combine the mayonnaise, ketchup, red onion, lime juice, hot sauce, olive oil and parsley.
Add the cooked shrimp and mix well. Season with salt and pepper to your taste.
Serve with Saltine crackers or patacones and garnish with chopped parsley or cilantro.
*Keep in the refrigerator until ready to serve. Mix well before serving and sprinkle the shrimp cocktail with fresh cilantro or parsley for garnish.*It will keep for two days in covered container, in the refrigerator.
