- 1 scallion chopped
- 2 garlic cloves
- ½ cup chopped onion
- 6 cups broth beef, chicken or vegetable broth
- ¾ cup quick oats
- 1 cup diced carrots
- 1 cup diced potatoes
- ½ cup of peas
- ½ teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro
Place the scallion, garlic and onion in the blender with ¼ cup of water.
Place all ingredients in a medium pot. Bring to a boil over high heat, stirring occasionally.
Reduce to medium-low heat and simmer for about 20 to 25 minutes or until the vegetables are tender. Add the cilantro and serve warm.
