Peel and slice the papaya. Remove all the seeds.
Cut the papaya into medium slices and place them in a medium pot with the sugar.
Add the water and bring to a boil over medium heat, boil for about 10 minutes with the lid on.
Uncover and simmer for about 30 to 40 or until the syrup thickens. Add the lime juice. Remove from heat and serve with a slice of cheese.
