Ground Beef with Potatoes Recipe

Ingredients
 

  • 1 large Russet potato peeled and diced
  • 1 tablespoon olive oil
  • ½ cup white or yellow onion diced
  • 1 red bell pepper diced
  • 3 garlic cloves minced
  • 1 scallion chopped
  • 2 pounds ground beef
  • 1 cup carrots diced
  • 1 cup peas
  • ½ teaspoon ground cumin
  • ½ teaspoon sazón with color
  • Salt and black pepper to your taste

Instructions
 

  • Cook the diced potatoes in salted water for about 20 minutes or until they are soft.
  • While the potatoes are cooking, place a medium sauce pan on a medium to high heat. Add the oil, onions, bell pepper, scallions and garlic. Cook for about 3 minutes and add the ground beef breaking the large chunks with a wooden spoon.
  • Stir well until all the ingredients are combined. Add the cumin, sazón, salt and pepper and keep cooking for about 10 minutes. Add the peas and carrots, stir well and cover the pan, Continue cooking for about 15 minutes more. Stirring every now and then.
  • Add the cooked potatoes to the meat mixture and stir until well combined. Remove the pan from the heat and let sit covered for about 5 minutes. Serve over white rice or mashed potatoes and enjoy.
