This ground beef with potatoes recipe comes together in under an hour with simple ingredients. Comforting food doesn’t get much easier than this dish! My grandmother used to make it often when she didn't know what to cook, this dish was always her last minute idea.

Ingredients for Ground Beef with Potatoes

Ground Beef: I like to use 85/15 for rich flavor.
Onion: You can use yellow, white or shallots.
Garlic: I love the flavor of fresh garlic, but you can use garlic powder if you prefer.
Scallions: It gives this dish extra flavor.
Bell Pepper: I just used red bell pepper, but you can also use green and red for more flavor.
Peas and Carrots: I like to use frozen to make this recipe, but feel free to use fresh if you want. Adding green beans and corn is also delicious.
Spices: Ground cumin, sazón with color, salt and black pepper.
Oil: I like to use olive oil, but you can use canola, corn or vegetable oil instead.
Potato: I used Russet potato to make this dish, but you can use any large potato that you like.
Cilantro: This is optional, but I like to finish my dish with fresh cilantro.

How to Make Ground Beef with Potatoes
Cook the diced potatoes in salted water for about 20 minutes or until they are soft.
While the potatoes are cooking, place a medium sauce pan on a medium to high heat. Add the oil, onions, bell pepper, scallions and garlic. Cook for about 3 minutes and add the ground beef breaking the large chunks with a wooden spoon.
Stir well until all the ingredients are combined. Add the cumin, sazón, salt and pepper and keep cooking for about 10 minutes. Add the peas and carrots, stir well and cover the pan, Continue cooking for about 15 minutes more. Stirring every now and then.
Add the cooked potatoes to the meat mixture and stir until well combined. Remove the pan from the heat and let sit covered for about 5 minutes. Serve over white rice or mashed potatoes and enjoy.

Storing Leftovers
Store the ground beef and potatoes leftover in the fridge in an air tight container for up to 4 days. Reheat in the microwave or stove top adding a splash of beef broth if it's too dry.
Serving Suggestions
I like to serve this dish over plain white rice, but this rice with ripe plantains (arroz de pajarito) will be also amazing with this dish.
If you want add a simple and fresh tomato and avocado salad it goes really well with recipe.
