    Lime Cake with Sweet Condensed Milk Frosting

    Ingredients
     

    Frosting

    • 6 tablespoons unsalted butter softened
    • ½ cup confectioner sugar sifted
    • ¾ cup sweet condensed milk

    Lime Cake

    • ½ cup (1 stick) unsalted butter, room temperature
    • 1 ½ cups all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • ½ cup buttermilk
    • 1 teaspoon vanilla extract
    • Zest and juice of 1 and ½ limes
    • 1 cup sugar
    • 2 large eggs

    Instructions
     

    • To make cake: Preheat oven to 350 degrees.
    • Grease a cake pan and set aside.
    • In a medium bowl, whisk the flour with the baking powder, baking soda and salt.
    • Reduce speed to medium. Add half of the sugar and beat about 5 minutes. Increase speed to high and add the rest of the sugar. Beat for 5 seconds, then reduce speed to medium.
    • In a small bowl, mix together the buttermilk, vanilla, and lime zest and juice  . Set aside.With an electric mixer, cream butter and granulated sugar. Add eggs one at a time.Add flour mixture, alternating with additions of the buttermilk mixture.
    • Pour batter in a cake pan and bake until a toothpick inserted in center of a cake comes out clean, about 20 to 25 minutes.Let it cool on a rack.

    Frosting

    • Beat butter with a mixer on medium-high speed until creamy, about 1 minute.
    • Reduce speed to medium. Add half of the sugar and beat about 5 minutes. Increase speed to high and add the rest of the sugar. Beat for 5 seconds, then reduce speed to medium.
    • Add sweet condensed milk and beat until the frosting is smooth.
    • Frost cooled lime cake and serve.

    I don't bake often so you won't find all that many cake, cookie or pie recipes on my blog. And when I do bake, I make mostly simple cake and pastry recipes. For those like me who are not great bakers, trust me, this is a delicious and easy to make cake recipe.

    I love limes and sweet condensed milk and always have them in my house! The other day I was craving something sweet and decided to create this Lime Cake. It was the perfect combination of sweet and citrus.

      I have baked cakes with lime before and so I know these are delicious! I used cream cheese to frost mine but your condensed milk frosting sounds like a great alternative, will bookmark this:) Happy New Year!

      That true, you don't do a lot of baked sweets here.

      But your pork with caramel sauce was sweet and it rocked. I made it for New Years.

      Do you know of a Colombian recipe that uses limes and sweet milk and graham crackers? Im not sure where to find it but an old colombian friend made it for me and it was really good! It was layered graham crackers with lime cream mixed in between! (: please help me figure out the recipe!! I think youd like it too.

        Hi! A little late with this comment, I know, but just wanted to mention that although it isn't Columbian in origin, this sounds a lot like Key Lime Pie (or a version of it), which has a crust made from graham crackers, butter & sugar; and a custard made from sweetened evaporated milk, egg yolks, and lime juice (zest optional). And yes, it IS "really good" and very popular in the US, especially in the South (originated in Florida, I believe).

      Made this yesterday for my husband’s birthday! The frosting stayed quite thin, as the texture of sweetened condensed milk, even after adding a little extra sugar. But, it was still delicious as the frosting soaked in the cake a bit. I also added a little green color to the frosting, toasted some coconut flakes for the top and added some thinly sliced limes for decoration. It was fantastic! (Also made your Ajiaco for his birthday meal, another outstanding recipe). Thanks so much for your blog!

      I decided to share my Colombian heritage with some friends so I made this cake thinking I would still have some at the end of the school day. Boy was I supprised! Everyone loved it and couldn't get enough. They went crazy for it, especially the icing. I will definately have to make this again. Thanks for sharing this recipe!
