
French Onion Soup
Ingredients
- 4 medium yellow onions thinly sliced
- ½ cup butter
- ½ cup red wine
- 5 cups beef stock
- 3 cups chicken stock
- Salt and pepper
- 1 small loaf French bread sliced and toasted
- ½ cup grated parmesan cheese
- ½ cup grated fontina cheese
Instructions
- In a medium pot, place the butter and onions over medium heat. Cook the onions for about 20 minutes or until golden brown. Add the wine and cook for about 7 minutes more.
- Add the beef and chicken stock and bring to a boil. Then reduce the heat to medium-low and add the salt and pepper. Simmer for about 25 minutes.
- Ladle soup in oven proof bowls or ramekins, top with the toast and add the cheese on top of the bread. Broil until golden, for about 1 minute.

Today’s featured recipe is French Onion Soup, which is one of my favorite soups to eat when out at a restaurant. But this week, however, I decided to recreate this famous soup at home.
When it’s as cold as it has been here lately, soup is one of my favorite things to eat. Is anything better than a combination of onions, broth and toast with melted cheese in a bowl? :). This soup was absolutely delicious, even my husband got a little upset because I didn’t make a vegetarian version for him, poor guy!

Oh my gosh, this looks so good. I made French onion soup once - several years ago and it was delicious. I don't know why I haven't made it since! We're eating a lot of soup this winter, so this is on my list! Beautiful photos!
