    When BlogHer asked me if I would like to take part in the Monterey Gourmet Foods™ review, I found it hard to refuse. I was very excited to incorporate their products in my recipes, products such as ravioli with fantastic fillings, tortellini and delicious sauces. Pastas are a staple in my house, and I have never met a kid who doesn't love pasta!

    My oldest son can have ravioli every night for dinner and never complain. When I ask my husband and son what they want for dinner, I often get the same answer...PASTA!

    So when I opened the box from Monterey Gourmet Foods, and I saw three different kinds of ravioli and one container of pesto sauce, I knew my whole family would be very happy.

    I started to plan dinner, and I decided I was not going to give into a basic tomato sauce. I have nothing against tomato sauce, and I make a big batch once a week, but after looking at those beautiful orange Butternut Squash with Orange and Sage Dough Ravioli, it just didn't seem right to top them with tomato sauce.

    I had fresh sage in the fridge and a bag of pistachios in the pantry, so I decided to make a simple pistachio sauce to drizzle over the ravioli.

    Butternut  Ravioli

    This dish brought a smile to our faces, beautiful color, comforting, and tasty, the perfect meal to end any day. The ravioli filling was creamy and delicious. I’d bet money that even your fussiest eaters would ask for seconds! I served Ciabatta bread crostini on the side, topped with Monterey Gourmet Foods' Basil with Almonds and Pine Nuts Pesto Sauce, which was also wonderful.

    Here's the recipe for the Butternut Squash with Orange and Sage Dough Ravioli with Pistachios Sauce. Buen Provecho!

    Ingredients:

    1 package of Monterey Gourmet Foods Butternut Squash with Orange and Sage Dough Ravioli

    Sauce:

    ¼ cup butter
    Fresh sage
    3 garlic cloves minced
    ¾ cup chopped pistachios
    ½ cup heavy cream
    Salt and pepper

    Directions:

    1. Cook pasta in large pot of boiling salted water until tender but still firm to bite, or according to directions on package, and drain.

    2. Melt butter in heavy large skillet over medium-high heat. Add garlic, sage, pistachios and sauté until golden, about 2 minutes. Add cream. Simmer until slightly reduced, about 2 minutes.

    3. Season with salt and pepper. Add ravioli and toss to coat with sauce.

      I think i would make some type of yummy salad to go with the pasta and add a mild cream sauce to go with it. I don't really use recipes any more...

      I think I would love the tortellini with their pesto sauce, so that would be the first thing I would make…honestly though, all of the products really look delicious!

      I would make a pizza with goat cheese, roasted tomatoes, onions and Monterey's Basil Pesto with Almonds and Pine Nuts. Unfortunately, there doesn't seem to be any Monterey products in my area.
