We Colombians love our breakfast and we have a variety of dishes to start the day. This Scramble Eggs with Cilantro dish is one of them. As I mentioned before in my post about “Cilantro“, this herb is one the most important ingredients of Colombian cuisine. I absolutely love its flavor.
This egg dish is creamy and really delicious and if you like cilantro as much as I do, you’ll enjoy this dish!

Ingredients
- Serves 4
- 8 large eggs
- Salt and pepper to your taste
- 2 Tablespoons butter
- 1/3 cup fresh cilantro finely chopped
- 5 tablespoons cream cheese
Directions
- In a bowl, using a fork, beat together the eggs, cream cheese, salt and pepper until blended.
- In a medium pan over medium heat, melt the butter, reduce the heat to low. Add the beaten eggs and cook, stirring several times, about 2 minutes.
- Add the cilantro, stir and continue to cook just until the eggs are done, about 3 minutes more.
- Spoon the eggs onto a platter and serve immediately with arepa or bread on the side.

Cilantro + huevos = lots of goodness. I usually use basil, but I have some cilantro and will definiyely make these right now. I also have my arepa maker and I can have that too. Thanks for the idea. Buen Provecho!

I love cilantro and am tempted to throw it in everything but I have to go lightly because our older son is one of those who say it tastes like soap.

This sounds really tasty. I was horrified to learn recently that some people find that cilantro tastes like soap! Thank goodness I’m not in that tragic minority. I could really enjoy this for dinner too.

That omelet is so tempting and I love cilantro. Being on a diet, the only omelet I am allowed to eat is with 3 egg whites. Yack! I’ve never eaten it.

Cilantro is the Latin spice by excellence! In Colombia I had a German friend living for a year and she did not like the cilantro in the food….OOOPPSS!!! after three months of fighting herself and asking people to remove cilantro taste from their dishes, she had to get used to it and enjoy its preciousness!!!
I value cilantro more here in the USA, and my garden had A LOT OF this summer, thank God!!!

I love cilantro, too but my hubby can’t even stand the smell of it, so I never add it to recipes… I just use it on my own plate. I’ve never put cilantro in scrambled eggs… it sounds good!
