These delicious pastries filled with guava paste, known as pastelitos de guayaba, are a popular Latin dessert that you’ll find in many Latin bakeries (panaderias) around the world.

In Colombia, we make these pastelitos with guava paste alone, and sometimes we add white cheese to the filling. Either way, they are absolutely fantastic! We also have another variation called pasteles gloria. Get ready… those are filled with guava paste, cheese, and dulce de leche!

My absolute favorite desserts are the ones that are the simplest and easiest to prepare. The kind that can be whipped up in thirty minutes or less from start to finish. When it comes to sweets, it doesn’t take much to please me. Give me a couple of pastelitos de guayaba with a cup of black coffee for dessert or a snack and I will be delighted.

This pastelitos de guayaba recipe is basically foolproof and delicious. If you are short on time using store bought frozen puff pastry makes this dessert easy and quick to make. Everyone will love them so you might want to make a double batch.

    Ingredients

    • 1 package frozen puff pastry, thawed
    • 1 egg, lightly beaten
    • 2 Tbsp sugar for garnish
    • 4 oz guava paste, sliced

    Instructions

    • Preheat oven to 400°F.
    • Flour a clean, dry counter top or other flat working surface. Lay out the puff pasty on the floured surface. Flour the top of the  dough. Roll out the puff pastry until it is half as thick (about ⅛-inch).
    • Using a large cookie cutter, cut into 24 circles and brush the edges of each circle with the egg. A little off center of each circle, place 1 slice of guava paste. Place another circle on top to enclose the filling.
    • Crimp the edges with a fork. Repeat with the remaining pastelitos, placing them on a parchment paper-lined baking sheet as you go. Bake for 20 minutes or until golden brown and puffy.

      Hi, Erica-

I love your site! Have you written a cookbook? If not, do you have any Colombian cookbook recommendations? English or Spanish are fine.

I love guava (guayava) pastries. I grew up eating them. To this day, when my husband travels to Tampa he always brings home these pastries. They are so delicious!

You left off the instructions on the sugar for garnish?

We brushed with egg and sprinkled it on top and it came out great.

Hi Erica. I use your website a lot. We love your recipes!!! Thank you so much. We've been making Cazuela de Mariscos (with rockfish instead of swordfish and usually substituting another seafood for the clams) for the past few years for my husband's birthday (he's from Bogota) as well as Milhojas for his birthday dessert! We plan to do the same tomorrow, but this year I was thinking of making a guayaba version of milhojas, replacing the arequipe with guayaba. I see this recipe here, which makes me wonder if I should bake the puff pastries as instructed here with a slice of guava paste (bocadillo) between two puff pastries for 20 min, or as instructed in the milhojas recipe (just one puff pastry layer for 15 min). Or do you recommend cooking the paste in water and then spreading it on the puff pastry? If you have a chance to reply soon, that would be amazing. His birthday is Oct. 12. Thank you!!!
