Carrots with Lime ( Zanahorias al Limon)
Ingredients
- Juice of 1 lime
- 1 tbsp fresh thyme
- Salt and pepper
- Pinch ground cumin
- 8 carrots, peeled, sliced and cooked
Instructions
- Melt the butter in a medium sauce pan, add the steamed carrots and stir well.
- Add the remaining ingredients and cook for about 5 minutes. Serve warm.

Carrot and mint! Genius! I am always trying to think of things to do with carrots and ya know what I end up doing with them? Nothing. I skin them and eat them raw. Or I don't even buy them. But this seems so simple and I even have the ingredients! Delicious, delightful, fantastico!
