    Carrots with Lime is a wonderful side dish. It's very easy to make and delicious with any meat, poultry or seafood.

    This is a wonderful side dish that you can prepare and serve with your favorite meat, fish or poultry. I added cilantro and thyme, but you can be creative and add your favorite herbs. This Carrots with Lime side dish is easy and quick to make and tastes delicious!

    Ingredients
     

    • Juice of 1 lime
    • 1 tbsp fresh thyme
    • Salt and pepper
    • Pinch ground cumin
    • 8 carrots, peeled, sliced and cooked

    Instructions
     

    • Melt the butter in a medium sauce pan, add the steamed carrots and stir well.
    • Add the remaining ingredients and cook for about 5 minutes. Serve warm.

      Coincidentally, I was thinking I hadn't made a side dish spotlighting carrots in a long time so on Monday I made something similar to your carrots only using honey, ground coriander seeds and a dash of cumin instead. I really like the acid from the lime here though and will definitely try this soon.

      Carrot and mint! Genius! I am always trying to think of things to do with carrots and ya know what I end up doing with them? Nothing. I skin them and eat them raw. Or I don't even buy them. But this seems so simple and I even have the ingredients! Delicious, delightful, fantastico!
