    French Onion Soup

    French Onion Soup

    Ingredients
     

    • 4 medium yellow onions thinly sliced
    • ½ cup butter
    • ½ cup red wine
    • 5 cups beef stock
    • 3 cups chicken stock
    • Salt and pepper
    • 1 small loaf French bread sliced and toasted
    • ½ cup grated parmesan cheese
    • ½ cup grated fontina cheese

    Instructions
     

    • In a medium pot, place the butter and onions over medium heat. Cook the onions for about 20 minutes or until golden brown. Add the wine and cook for about 7 minutes more.
    • Add the beef and chicken stock and bring to a boil. Then reduce the heat to medium-low and add the salt and pepper. Simmer for about 25 minutes.
    • Ladle soup in oven proof bowls or ramekins, top with the toast and add the cheese on top of the bread. Broil until golden, for about 1 minute.

    Today’s featured recipe is French Onion Soup, which is one of my favorite soups to eat when out at a restaurant. But this week, however, I decided to recreate this famous soup at home.

    When it’s as cold as it has been here lately, soup is one of my favorite things to eat. Is anything better than a combination of onions, broth and toast with melted cheese in a bowl? :). This soup was absolutely delicious, even my husband got a little upset because I didn’t make a vegetarian version for him, poor guy!

      A true french classic, another dish I could eat gallons of LOL. I love the fact that it's a true and traditional soup. As much as I would love to make it fresh like that, a shortcut my mom and I used (french-canadian mom) we would buy the campbells french onion soup, and then just get a good bread and some provolone and do it that way. It would just be a bit easier to make. Soups still came out great, but this recipe is definately restaurant quality.

      How funny....I made French Onion Soup the other night. Except mine came out too salty :(...and I noticed that your recipe doesn't call for salt so next time I will have to omit that ingredient. Love the all that melty cheese on top!

      Oooh! I made this in my French cooking class last month - the recipe called for a bit of thyme but was otherwise pretty much the same. Yours certainly looks much prettier - the pots are gorgeous.

      I'm going to pass this recipe on to my sister- it is her very favorite soup. Unfortunately, it does not agree with me, although just looking at it makes me drool. Boo hoo.
