    Saffron (Azafran)

    It is known as the most expensive spice in the world, but a little pinch goes a long way. I love the taste and color that Safron gives to food. It has a delicious honey-flower flavor. Spain and India are known to be the biggest producers of this spice.

    It is a key ingredient in the world famous Spanish dish, Paella, which  is one of my favorite dishes.

      I love saffron and for the longest time was very hesitant in using it because of the expense, and because it was not a spice we had growing up. I recently made a Persian inspired sorbet of saffron, lemon, and rosewater - and can I tell you that flavor combo was so refreshing and the color with the saffron was amazing. You don't need to remind me of all the wonderful recipes you have - I am slowly (too slowly) working my way through them.

      I buy saffron at the Persian grocery store as it comes straight from Iran; I know it is of good quality. i use it a lot too and love it! Love your first dish with the coconut sauce and the salmon.

      I saw on Good Eats that some cheap saffrons have fillers in them. I need t get more expensive spice

      I didn't know that azafran also meant saffron! Hmmm.....you learns something new everyday. I still love the salmon with the coconut saffron sauce - so gorgeous and tasty looking!

      Love it! I was lucky that my sister got me some Azafran from her trip to Spain a few months ago (It isn't funny that that's the only thing I asked for when she asked me what I wanted?).
