    Salmon Steaks with Roasted Grape Tomatoes

    Ingredients
     

    • 2 salmon steaks
    • Salt and pepper
    • Olive oil
    • ¼ cup olive oil
    • 3 cups of grape tomatoes
    • ¼ cup chopped basil
    • 2 garlic cloves
    • 2 teaspoons capers
    • Salt and pepper

    Instructions
     

    • For the tomatoes: Preheat oven to 450 degrees F. In a medium bowl add the tomatoes, garlic cloves, olive oil and sprinkle with salt, pepper.
    • In a baking dish, place the tomatoes and garlic cloves, ensuring they are in just 1 layer. Roast for about 30 minutes, add the basil and capers, then stir well. Set aside.
    • To cook the salmon: Coat the salmon steaks lightly with oil, season with salt and pepper,
    • Grill fish to medium rare, about 3 minutes per side. (Fish should be well colored on the outside and barely translucent at the center.

    I made this salmon dish over the summer, but for some reason I forgot to post it. It is really simple and easy to make, but absolutely delicious. I know this is a summer dish, but you can make any time of the year. I used an outside grill, but you can cook using an indoor grill or bake the salmon steaks, it will be delicious whichever way you choose!

      Love this idea, Erica. We eat salmon a lot....I'll give this a try soon. The colors are so appealing, let alone the taste. YUM!
      Also, really liked the idea of bacon wrapped prunes!

      Looks great! Of course here in Florida we use our grill all year. I have just the place to get some nice looking grape tomatoes too. They look a lot better than the other tomatoes.
