Baked Plantains Stuffed with Cheese is a delicious dish popular in Latin America. In Colombia we also like add guava paste and it's the perfect combination of sweet and savory.

Plantains are eaten all over Colombia and South America. This delicious vegetable is versatile and can be cook in different ways. You can bake, broil, grill and fry plantains. Green plantains are unripe (starchy and hard) and yellow plantains are ripe (soft and sweet). In Colombia we make savory and sweet dishes with plantains.

For this baked plantains recipe you should use very ripe plantains, because they are sweeter. Plátanos Asados con Bocadillo y Queso make a delicious side dish or appetizer. Omit the guava paste for a classic plátano asado con queso or baked plantain with cheese.

If i have to pick one recipe to make with ripe plantains this will be the number one on my list. I love the combination of sweet guava paste with cheese and the texture of the baked plantains is wonderful.

Plantains: You need ripe plantains to make this recipe.
Butter: To bake the plantains.
Guava Paste: It's a paste made with guavas and sugar.
Cheese: I like using mozzarella cheese to make plantains with cheese and guava, but a hard white cheese like queso blanco will work.

How to Make Plantains with Cheese and Guava

Preheat the oven to 400°, cut the ends of the plantains and peel.

Place them in a baking dish and brushed with the butter, bake for 30 to 40 minutes.

Remove from the oven and slice the plantains lengthwise but not go all the way trough, stuff them with the guava paste and cheese slices.

Return to the oven and bake 10 more minutes until the cheese melts and serve.

I only spent 2 weeks in Colombia last year but somehow I feel nostalgic about that country. I had the best time there ever. And the best food. I'm a big fan of platanos now and always buy too much when i can find them here in Hungary but then i never know what to do with the ripe ones. I will definitely try this recipe. Do you think quince cheese would also be good instead of the bocadillo?
