The sauce is what really makes this Sudado de Pollo dish and when you mix it whit white rice it is delicious. I love it because it is truly traditional Colombian cuisine that Colombians eat every day and reminds me of my childhood every time I smell it.
Enjoy my Sudado de Pollo recipe.
Ingredients
(4 servings)
8 chicken drumsticks or thighs, without the skin
1 tablespoon vegetable oil
½ cup chopped onion
¼ cup chopped red bell pepper
1 minced garlic clove
2 cups chopped tomato
1 chicken bouillon
1 tablespoon sazon goya with azafran
¼ teaspoon cumin powder
¼ cup chopped fresh cilantro
¼ teaspoon salt
¼ teaspoon pepper
8 small yellow potatoes, peeled and cut in half
3 cups water
Instructions
1. In a large pot, heat the vegetable oil over medium heat. Add the onion and red pepper and sauté until onions are translucent, about 3 minutes. Then add the tomatoes, garlic, salt and ground pepper and sauté for 5 more minutes.
2. Add the chicken, water, chicken bouillon, sazon Goya and cumin powder. Cover and cook for 25 minutes, stirring occasionally.
3. Add the potatoes and cilantro and cook for an additional 30 minutes or until the potatoes are tender.
4. Serve over white rice.

[…] My fiancé was born and raised in the UK. His mother is from Palmira, Colombia and moved to London in the seventies as did his father, a haematologist from Manilla, Philipines. They met, married and soon after my lovely fiancé was born! My fiancé spent time living in Colombia during his teens. He was taught to cook this dish by his Aunt. His Aunt later moved to a lovely Spanish town called Cuidad Real, so luckily for me I was able to visit her and sample some de-lish Colombian home cooking. Now with most of his Colombian family living in London I get to sample it all of the time! You can find out how to cook chicken stew here. ♥ […]

Yum! This sounds wonderful. I’m adding it to my recipe box and hope to make it soon. Can one find sazon goya con azafron at most Latino markets?
Ursula says
You can find Sazon in any grocery store, usually. It’s sold with and without achiote. The red is with achiote! Enjoy

Nowadays you can find it in any supermarket in the Spanish food or Goya foods sections

Oh wow your stew looks very delicious. I am looking forward to making this one next weekend. As I live in Tasmania, I think I might have a hard time finding some sazon goya with azafran, any idea of what I might substitute? I will try my best to find some though!

Oops, one more question…
Your ingredients says 1 chicken bouillon, do you know what this might be as a liquid measurement, like liters or milliliters?
Anonymous says
they are sold in cubes or little powder packages . use one cube or 1 pkg. Taste! you may want to add a bit more depending on the amount of water you use. This is a light seasoning you cant really over do it.
Erica says
you can find sazon goya in any supermarket in the Latin aisle.
you can buy it online at the amazon store or use
turmeric or any pre-mixed seasoning powder with coloring.
Maggie, you can replace the chicken bouillon for 3 cups of chicken stock, but do not use water.

I made this today–just used one large idaho potato and cut it into 6 sections b/c I didn’t have any yellow ones. I also added some mushrooms to it (personal taste). It was very good!

My wife is American, but loves latin food, so I tried your recipe, since I am ‘new to the kitchen’, and I didn’t know where to begin, this recipe was just what I needed. Made it for dinner and it was great. Thanks so much. Any chance of getting a recipe for “Lengua en Salsa” Thanks again!!!

Hey i love making this recipe but as a working mom i was wondering if i could do this on a slow cooker so it would be ready by the time i got home? If so can you please advise for how long and temperature.
Chris Caldwell @ World Cup of Food says
Normally I wouldn’t answer a question intended for someone else, but yours led me to find:
thekitchn.com/5-tips-for-converting-recipes-to-the-slow-cooker-189343
…which has really good advice you could use. As a slow cooker fan myself, I found the article to be very helpful.

Hey! This looks great! We are doing a Colombian food feature soon and are going to be making our own pollo sudado tonight, combining features from this version with a few others. A couple of sources we found use achiote, so we’ll add some of that as well. We’ve even seen mustard and Worcestershire sauce as ingredients, but we might pass on those. Thanks for providing the world with your valuable insight on Colombian food!

Hi Erica,

Yes.

If so, how much of each (I too am trying not to use msg)?
Thank you!

Estimate Erica,

Do you think I could do this in a slow cooker? What would you suggest I do differently, if anything?

Did you try it in the slow cooker? Because i was going to ask the same question And if you did what did you so differently?

Omg…I made this tonight. It’s SOOOOOO good! My best friend bragged that her mother-in-law made this for her family last night, so I Googled the recipe and found this blog. I’m glad I did because I had just about everything already at home. However, my grocery store didn’t sell the sazon with azafran, so I found a substitute online (1 tbsp each of ground coriander, cumin, garlic powder, ground annato seeds, garlic powder and salt). My house smells amazing and the taste is divine. I am going to try something many more of your recipes now! Thanks!

I’ve made this a few times and tastes just like mom makes 🙂 my only question is when you cook for 30 minutes, do I lower the heat? Because I’m not getting as much “caldo” as I’d like.

You missed the Ajiaco!!

Michelle says
Can you do this recipe in the Instant Pot? If so, are the directions and timings the same?
Imani says
Made this last night for dinner— absolutely delicious! I used Lawry’s seasoned salt instead of Sazón. I found that I didn’t have very much sauce, though. I tried adding another 1/2 cup of water but it didn’t do much. Don’t get me wrong, the taste is on the money, I just wish I could have some of that juice on my rice! Anywho, I served with aguacate y limón, y la cena era perfecta!
