In Colombia we use Guava Paste or Bocadillo in all kinds of dishes. It is a combination of guava pulp and sugar which is cooked slowly until it becomes thick enough to form into a block, which is the form in which it is usually sold. Guava Paste can be found in Latin markets and online.

Do you have a recipe to make this from scratch? I'd love to try it! I can't seem to find anything on the internet.
Erica
Brian- to make Bocadillo from scratch. Fresh guavas, sugar and orange juice. I am going to post the recipe.

Dear Erica:
I hope you are doing well. I'm replying to your post regarding a recipe for bocadillo de guayaba from scratch. I wonder if you ever posted it. Also, if you have an idea about how to make bocadillos pero de mandarina instead of guava, I would really apreciate it.
Sincerely, John R. Hackman

Hey Brian - I ordered a bunch of paste on the internet - they would only sell by the dozen - I'd be happy to share - don't want it to go to waste.
