Do you remember my Colombian-style roasted chicken legs ? If not, don't worry, here's the recipe. Well, here is another variation of roasted chicken that we have in Colombia and this time I used a whole chicken. The skin was crispy and flavourful. It is a beautiful Pollo Asado, don't you think? Although I am sure my vegetarian husband wouldn't agree with me 😉

The aromas of chicken, beer, onion and spices together were fantastic and the house smelled delicious! Remember, it is important to let the chicken marinate overnight for better flavor.

    I hope you enjoy it!

Hi there! What kind of beer do you recommend? Is there a specific brand or type (like pilsner, ipa, etc)?

      Thanks!

I just returned from a trip to Cartagena and had some wonderful street chicken I was told was marinade, rotisserie roasted and then finished over a charcoal grill. It was served with a chimichurri sauce. Would this chicken if cooked on a rotisserie and the grilled over charcoal be similar to the street chicken we had in Cartagena?

Love it! I wanted to try this one but on my grill using the rossiterie, do you think it will work? Any suggestions on how to add the beer considering it is going to be in the rossiterie instead of a recipient?

You add the beer to the pan or you pour it over the chicken.

To the pan; it’s a dry rub. The beer helps keep the meat moist as it evaporates in the high heat.

          1. I always use dark beer (different brands). You can use your favorite dark beer.

          2. I cooked the potatoes in a different pot for this recipe.
