Do you remember my Colombian-style roasted chicken legs ? If not, don't worry, here's the recipe. Well, here is another variation of roasted chicken that we have in Colombia and this time I used a whole chicken. The skin was crispy and flavourful. It is a beautiful Pollo Asado, don't you think? Although I am sure my vegetarian husband wouldn't agree with me 😉

The aromas of chicken, beer, onion and spices together were fantastic and the house smelled delicious! Remember, it is important to let the chicken marinate overnight for better flavor.
I hope you enjoy it!

Looks great! It's been a while since I made a roasted chicken. I'm thinking I need to fix that. 🙂

Hello! from Munich. I really like your blog

one of the things I love about roasted chicken (besides the lack of attention that is required during cooking) is the leftovers!!
Barbara Bakes
That is a gorgeous chicken! I can only imagine how hungry I'd be while it was roasting!
Faith
My hubby would go crazy for this roast chicken! I love all the fresh herbs and spices in it!
Chris
I love the flavor profile for this roasted chicken. I use beer in my mop for my smoked chicken and it works very well but haven't tried it roasting. I'm tempted to try your recipe but smoke it low and slow instead of roasting it, just to see what it tastes like. I can't see why it wouldn't work. Great recipe, Erica.

Hi, Erica,
Who takes your pictures? Are you the photographer and food stylist as well?
I still owe you the "Pastel de Yuca" recipe I offered awhile ago.
Saludos!
Erica
Hi Pilar, Yes, I do everything: I am the photographer, writer and food stylish! I clean my kitchen, too 😉

I just found a book for colombian recipes that my mother-in-law gave me, and I realized I haven't been over here in a while! And perfect timing too - this chicken looks incredible, and Alejandro has been asking (no, begging), for roasted chicken.

Love that roasted chicken! It looks beautifully cooked and the flavors sound great!

It looks amazing, but I dont understand why people rate a recipe without trying it first! It’s really annoying because it shows false rating.
Velva
This just the kind of roasting chicken that you open your windows while cooking to fill the air outside with the savory flavors. This is a wonderful recipe for roasting chicken,
Bo
That chicken looks perfectly roasted.

They say that you should never go shopping on an empty stomach, but they should say, never look at foodie blogs on an empty stomach. This chicken looks amazing, tender and juicy! Love the addition of the beer, alcohol just seems to marry so well with meat. And the spices, yum! Ok now, my empty stomach is really killing me lol
