    This bean, corn and chipotle dip recipe is very easy to prepare and has plenty of flavor. It also makes a delicious sandwich spread.

    This homemade bean dip recipe is easy to make with simple ingredients. Ready in five minutes and perfect for party, watch a game or a healthy snack during the week.

    About this Bean, Corn and Chipotle Dip

    You can make it ahead of time and keep it in the fridge in a container with a lid up to 3 days. Serve it with patacones, plantain chips, crostini, tortilla chips, pita chips or fresh vegetables.

    It's also delicious as a quesadilla, taco, burrito or enchilada filling.

    Ingredients You'll Need

    Beans: You can use your favorite beans. I like to use canned beans to make this dip, but you can cook them from scratch.

    Corn: Use frozen, fresh or canned corn for this recipe.

    Chipotle Pepper: I like to use canned chipotle pepper for this bean dip. If you don't like the flavor of chipotle feel free to replace it for jalapeño.

    Spices: ground cumin, paprika, salt and black pepper.

    Vegetables: I used yellow onion, but you can use scallions or red onion if you want.

    Herbs: I like to use fresh cilantro, but parsley is also a good option.

    How To make this Bean Dip

    • Place all the ingredients in the food processor and mix until well combined and smooth.
    • Transfer the dip to a serving dish and top with fresh cilantro.

    • 1 15 oz can kidney beans
    • ⅓ cup cooked corn
    • 1 teaspoon ground cumin
    • 1 teaspoon chipotle pepper
    • ¼ cup chopped onion
    • ⅓ cup fresh cilantro
    • ¼ cup olive oil
    • 1 teaspoon paprika
    • Salt and pepper

    Instructions

      That looks great! I've made dips with black beans, garbanzo beans and white beans, but never kidney beans: great idea.
