Sudado de Pollo is a chicken stew easy to make, hearty and full of flavor. Colombian sudados are usually served with white rice and avocado on the side.

The sauce is what really makes this Sudado de Pollo dish and when you mix it whit white rice it is delicious. I love it because it is truly traditional Colombian cuisine that Colombians eat every day and reminds me of my childhood every time I smell it.

This Chicken Stew is perfect for a weeknight dinner. It’s hearty and flavorful without a lot of effort. This easy one-pot meal comes together with just a few simple steps.

Sudado is a stew made with poultry, beef or pork, spices and vegetables, simmered in liquid. You can use any combination you’d like, but this is my mom's sudado de pollo recipe and contains mostly classic ingredients.

Can this be made in a crockpot? If so, how should it be adapted?

This recipe is one of my go-tos. My family is Colombian and I finally know how to make a good sudado!!! The only thing that I add is corn. I buy the pieces that come frozen and cut them in half. It’s perfect, thank you!

I’ve made this several times now and my wife, who is from Cali, Colombia, loves it. I love to be able to make her favorites from back home and the fact that it’s in English is so helpful. Thank you for sharing your recipes!

I am so happy I found your site!!
When do you add the yuca and carrots? With the chicken?

It sounds very similar to Cuban "fricase de Pollo", but ours includes white wine, Manzanilla olives and raisins. Of course, we marinate it with Goya o Badia "bitter orange" and pretty much else like the Colombian style. It sounds good.

When I add the chicken, water, chicken bouillon, cumin powder, and sazon goya, do I let it reach a boil before I cover it or right after adding it?

I’m making the chicken stew right now. I lived in Colombia for 2 years and this was a main staple in my life. I missed eating this so much !!
