Crispy Baked Chicken Strips
Ingredients
- 4 boneless, skinless chicken breasts, cut into 1-inch strips
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- ½ teaspoon ground cumin
- salt and pepper
- ½ teaspoon paprika
- ¼ cup flour
- 2 eggs, beaten
- 2 cups panko (bread crumbs)
Instructions
- Place the chicken in a bowl, add the onion powder, garlic powder, cumin, salt and pepper. Cover and refrigerate for 30 minutes.
- Adjust an oven rack to the middle position and preheat the oven to 400° F. Place an oven-safe baking rack on a baking sheet.
- Place the flour, eggs and bread crumbs in separate plates. Dip the chicken pieces in the flour, then the egg, then the bread crumbs, shaking off excess in between each step. Place the coated chicken strips on the prepared baking rack.
- Bake 15-20 minutes, or until the chicken is cooked through. Serve with your choice of dipping sauces and bake potato strips.

These look delicious!! I love how they're baked and not fried. I avoid frying at all costs - not so much because it's oily but because I dislike cleaning all the grease in the kitchen after. Love this recipe! I don't have kids yet, but these will sure come in handy when I do! Which won't be for quite some time lol.

Happy 2011!
Gorgeous! Is this a Columbian recipe, or just yours? I have my students make variations of these with oven fries and they die and go to heaven. Kids cooking is a beautiful thing. You have inspired me to do something a little different with the tenders I have in my freezer. (I recently made a whack of cordon bleu for my parent's 60th anniversary - their request - and pulled off the tenders!) YUM!
Will let you know how it goes!

Mmmm...one of my favorite! I love mixing some parmesan cheese in with the bread crumbs too. I love it how crispy you can get it in the oven! I'm going to try it with cumin next time it sounds good.
