    Red Bean Dip with Corn and Chipotle

    Ingredients
     

    • 1 15 oz can red kidney beans
    • ⅓ cup cooked corn
    • 1 teaspoon ground cumin
    • 1 teaspoon chipotle pepper
    • ¼ cup chopped onion
    • ⅓ cup fresh cilantro
    • ¼ cup olive oil
    • 1 teaspoon paprika
    • Salt and pepper

    Instructions
     

    • Place all the ingredients in the food processor and mix until well combined and smooth.
    • Transfer the dip to a serving dish and top with fresh cilantro.

      Funny enough, I'm planning a white bean dip that is very similar to this. Asked my husband to buy the beans tomorrow...

      But much of the stuff on this blog is quite new to me...what a delight!
