    Red Tomato Salsa

    This roasted tomato salsa is absolutely delicious and very easy to make. Perfect to eat with tortilla chips, tacos or even on top of fish.

    Ingredients
     

    • 1 28 oz can whole tomatoes
    • 2 cooked tomatillos
    • ½ teaspoon ground cumin
    • ½ teaspoon sugar
    • 2 garlic cloves
    • ⅓ cup onion
    • ¼ teaspoon dried oregano
    • ⅓ cup fresh cilantro
    • 2 tablespoon apple cider vinegar
    • 2 jalapeño peppers
    • Salt to taste

    Instructions
     

    • Place all the ingredients in the food processor and process until smooth.
    • Adjust the seasoning and chill until ready to serve.

      I love a good fresh home made salsa, you can't beat it. I just need to learn how to make my own tortillas and then fry some at home because I can just imagine how good that would be. I've been too lazy so far;)

      I have never understood the use of tomatillos. Now that I live in the SouthWest I see these a lot but growing up in Toronto I never did. How do they change the flavor of the salsa?
