Sancocho is a comforting, hearty and filling soup popular in Colombia and other South American countries.

Sancochos were served every weekend in my house when I was growing up…and I hated eating soup!
Colombia is a country that is big on soups, at least that’s how it was in my house. After many battles with my mom, I fell in love with soups and here I am sharing these delicious Colombian sancochos recipes with you. I think my parents would be very proud of me for eating my soup 🙂
This dish is also popular during the holidays especially on December 25th and January 1st. You can see people making sancocho over open flame in the streets, next to the rivers or in their kitchens. I love serving this soup with avocado and white rice on the side.
What is Sancocho Made of?
Sancochos are made with a combinations of protein, potatoes, yuca, plantain, corn, onions, peppers, other vegetables, herbs and spices. like many traditional recipes every cook and country has its own version. In Colombia we have different sancochos depending on the region.

When I was a kid, I was in a borading school and we were served vegetables (stir-fry) everyday; I always wasted it but now I can give anything to get those fresh vegetables delivered here ( as i am far away from my home(India)), and I love all vegetables now! It's the same with me about soups! My mom used to serve them for the first course almost everyday (as is tradition in Ukraine) and I didn't eating them too much. Now I love soups, although I have to say I make all different kinds of soups other than the ukrainian/russian ones 🙂

I LOVE SOUP! If my husband would let me, I'd be cooking soup every night! I great up in Korea and we used to eat soup everyday, too, for almost every meal. I hated it too but now that I'm away from Korea, I miss it a lot! 🙂 Thank you for sharing your soup recipes!

All the soups look fantastic, and I enjoyed the guest bloggers! My sister who lives with a south american man complains he makes soup like SANCOCHO DE GALLINA, and I laugh, because I love it, very rustic like our mother used to make.
I still love all things from my childhood, but just revisited mac n cheese, she baked it and I do not care for that version, and also I love carrots now, but would gag and make a big scene to keep from eating them as a child 🙂
