Salmon is one of my favorite proteins. Not only does it cook very quickly, about 15 minutes, but I find Salmon to be one of the most versatile proteins in the kitchen with which to work. It’s delicious, healthy and very easy to prepare.

All your Salmon recipes use a dry heat so that the outside is seared. We like ours moist and prefer to poach in either white wine or milk to which various herbs and spices have been added.
